White Chicken Chili Recipe by Mrs. Coupon Dad!!!
Hello everyone, it’s Sandy, a.k.a. Mrs. Coupon Dad. I have heard that many of you are asking for my white chicken chili recipe. I omitted the chicken and cut up my left over turkey and made the chili out of it. It was awesome!
Here’s what I do:
4 chicken breasts cut into bite sized pieces
flour – enough to coat chicken
8 cups of water (You can also use chicken broth or stock)
4 cans Great Northern Beans
1 can green enchilada sauce
1 onion
3 stalks of celery
1 green pepper
several twirls of olive oil
1 tbsp. cumin
cheddar cheese, sour cream, and Fritos to finish
Salt and pepper chicken and coat with flour. Dice onions, celery, and green pepper. Heat oil in large stock pot. Add chicken and brown. Add veggies. Once veggies are transparent, add water. Next, add beans, enchilada sauce, and cumin. Bring to boil then reduce heat and simmer for 30 minutes. Serve with cheese, sour cream and Fritos or corn chips. This soup is better the next day!!
