
Anytime there is a celebration in my house, fried chicken is usually involved. It is not something that we eat often, making it that much more special when we do.
I like my fried chicken extra crispy. I have found using panko bread crumbs does the trick. You can find panko bread crumbs in the grocery store with the bread crumbs or they can be found in the Asian section.
Here’s what you need:
4 eggs, beaten
1/2 cup milk
1 box panko bread crumbs (I use plain ones so I can control the sodium)
flour for dusting, probably 2 cups
what ever seasoning you like, I prefer Nature’s Seasoning
6 boneless skinless chicken breast cut in strips
enough oil for frying (I prefer peanut oil)
Salt to taste
Here’s what you do:
Preheat your oil to about 350 in a large skillet. Don’t overfill your skillet. The oil could boil over causing a fire.
Add milk to beaten eggs, whisk.
Next, season the chicken to taste. Also season the flour and breadcrumbs. While your oil is heating, coat the chicken in the flour shaking of the excess. Next dip in the egg mixture for 30 seconds and then dredge into panko bread crumbs covering each strip completely.
Slowly add prepared chicken to hot oil. Fry for 5 to 6 minutes or until and internal temperature of 165. Drain on paper towels and salt to taste.

Serving suggestions-
Dip in honey mustard
Serve with fries
Cut up and add to a fresh garden salad
Add several tbsp of your favorite BBQ sauce to a large bowl and toss strips around (great football food)
Add lettuce tomato and ranch dressing, roll in warm tortilla
